Market research:

"According to research conducted by Peak Tech Consulting, Colorado Springs, Colo., 36% of consumers in stores without self-checkout would like to see the application installed."
...
"'The perception is that self-checkout is faster than regular checkout,' .... 'Plus, people like to avoid face-to-face interaction if possible.'"

I guess it makes it easier on the conscience to push your shopping cart full of godzilla-sized bags of chips, gallons of sweet drinks, sacks of marshmallows and many other such wholesome foods out the door to your big ass vehicle in the parking lot if you don't have to look anybody in the eye while buying the stuff.
